It's feeling rather Spring-ish with the sun shining and birds chirping, even though it's still chilly in NC.

This week is my kid's spring break and they're mad because we're staying home. I have to remind them often that we just did Disney. 💰💰 I love it there, but it takes money in exchange for the magic, haha!

Easter is late this year, but I'm still thinking about brunch recipes. These recipes are quick and easy prep, and work for breakfast or brunch. Plus, they feed a crowd for holidays, like Easter. Honestly, these are also great for a weekend breakfast with just the family too.

If you have a ton of people coming over, make all three recipes!

Egg Puff Pastry Tarts

These are super cute and elegant, but still simple to make. We're using store-bought puff pastry dough and filling the inner portion with bacon, egg and cheese. Recipe makes 8 tarts.

Brioche French Toast Casserole

This one you may have seen before on my website, but if you haven't made it, it's time. It takes between 5-10 minutes to prep, then pop it into the oven for the best breakfast casserole. This recipe has over 1 million views on TikTok too and lots of great reviews! It easily feeds 8 people.

Banana Chocolate Chunk Muffins

If you have mushy brown bananas, don't throw them away! Make these delicious banana chocolate chunk muffins instead. They are so moist with giant chocolate chunks. A must bake recipe and it makes 12 muffins.
