I feel like Winter is when I have the most time at home, yet I still don't want to cook. Maybe I'm supposed to be hibernating like a bear. ๐Ÿป

Anyways, my family still expects dinner (so annoying ๐Ÿ˜‚๐Ÿ˜‚), so I'm all about 30 minute or less dinners. This week I have some favorites to share, so let's get to it.

30 Minute Dinners

New to the blog this week is this Beef and Broccoli Stir Fry. I always use rice for a stir fry and I did udon noodles instead for this recipe. It turned out so good! It's ugly looking, but the taste is YUMMY.

More Quick Recipes:

  • โ€‹Beef Tortellini: A one pot favorite ready in 25 minutes.
  • โ€‹Chicken Romano: Crispy chicken cutlets are always the right choice. Pair these with rice, pasta or potatoes for a family favorite.
  • โ€‹Sweet Chili Salmon: Prep it in 5 minutes and let the oven do the work. Great served with rice and this Cucumber Avocado Salad.
  • โ€‹Roast Beef Sliders: A favorite one to make on chill nights when you're eating dinner in front of the TV watching football.

*One of my favorite kitchen gadgets is this rice cooker. I'll pop rice in there and only have to worry about cooking the main dish and maybe a veggie. So easy!

It's supposed to snow this weekend in NC. OK, maybe just an ice storm, but I'm trying to manifest fluffy snow. Stay warm and cozy everyone.
