Last week, my husband drove 5 hours away to get a half a cow we ordered months ago and stocked up our deep freezer. I have loads of ground beef, which has inspired this post.

Plus, let's face it..groceries are ridiculously expensive and ground beef is still kind of affordable. There are so many ways to prepare it, and it's high in protein and a favorite at our house.

You will find that most of my recipes call for a ground beef with 85/15 lean to fat ratio and let me tell you why. It doesn't dry out like a 97/3 or 93/7 does, but also doesn't leave a bunch of grease in the skillet like 80/20. If that's not what you have in the fridge, please don't make a store run for it, but next time you buy it, it's a good thing to remember.

New to the Blog

This week I made these Taco Cups, which were a big hit at our house. I like these as a Super Bowl appetizer, but also for a weeknight dinner. It tastes like a mini version of nachos and the recipe makes 24 of them. They're made in a muffin tin to get this shape.

For a party appetizer, I'd go ahead and add the toppings, but for the family, I let everyone add what they wanted on. My kids are kind of picky, especially Leah, who is a cheese and sour cream only kind of girl.

We got hit with some snow (really more sleet) last weekend and my kids had off of school all week. More snow is coming tomorrow, so please pray for my sanity.
