5 Easy & Healthy Spring Dinners

Spring is the season where life starts to get busy again. It's been in the 80's all week in NC, which I'm loving. Don't be too jealous though, because we're also living in a yellow pollen cloud. The sniffles won't stop.

I love colorful, healthy dinners in the Spring, that are also low effort and here's a few of my favorites.

Spring Dinners

We're starting off with one that I just published today. If you love pepperoncini, you'll want to try this Pepperoncini Chicken. It's a one skillet dinner with chicken, rice, veggies, pepperoncini and feta. Plus, the marinade uses pepperoncini juices, which really tenderize the chicken.

Cilantro Lime Salmon: Pair this one with rice and my Mango Pico De Gallo for a quick and easy dinner that's high in Omegas & protein.

Baja Shrimp Tacos: Flavor packed and ready in 40 minutes with the best jalapeno slaw.

Blackstone Chicken Fajitas: These are made on the Blackstone griddle, but you can easily make them in the skillet instead.

Beef Burrito Bowls: These are always a favorite in our house. The kids love them because they can add their own toppings.
