30 Minute Weeknight Dinners

For those of you just starting kid's back to school, I feel your pain. We've been at it for almost a month now and I'm already ready for Christmas break, haha!

My car broke down this week too, so I've been driving my husband's giant truck and he is not happy about it. ๐Ÿ˜œ๐Ÿ˜œ

Right now I'm all about quick and somewhat nutritious dinners that I can throw on the table in under 30 minutes.

I have a video series on social media right now, so if you're not following along please do! I'm pretty much on every platform, except snapchat, because I'm too old for that.

To this week's recipes...

30 Minute Dinners

Monday:

  • โ€‹Chili Mac: A cozy, one pot meal, that's also easy on the budget. It's cheesy, delicious and so simple to make!

Tuesday:

  • โ€‹Teriyaki Ground Chicken Lettuce Wraps: Super yummy and ready to eat in 20 minutes. These are low carb and high protein, but if you need more carbs at dinner, just pair them with Rice or a bowl of this 10 minute Chili Oil Ramen.

Wednesday:

  • โ€‹Chicken Fajitas: Make these on the blackstone or in the skillet for quick & tasty dinner.

Thursday:

  • โ€‹Shrimp and Broccoli Stir Fry: High in protein and nutrients from the shrimp and veggies. Time Saving Tip: Buy the shrimp peeled and deveined from the butcher or it can quickly turn into a 50 minute meal with much more mess. I like Argentine Pink Shrimp best if you can find them, with gulf shrimp as a 2nd choice.

Friday:
