The cost of groceries continues to rise and I think we're going to have to start getting creative.

This week's video is all spending less while still eating a well balanced meal with high protein.

In the video below, you'll see that if you buy 1 large rotisserie chicken from Costco for $4.99, you can remove the skin and divide the meat into 3 equal parts for these 3 recipes. *If you don't have a Costco membership, use 2 grocery store rotisserie chickens because they are way smaller.

Chicken Hashbrown Casserole

This recipe is so easy to prep in one bowl with shredded chicken, hash browns and lots of cheesy flavor. It makes a full 9x13 dish, which is enough 6-8 people. If you have less people to feed, it also makes great leftovers for lunch the next day. Note: This one is a bit spicy from the jalapeño, so if you have kiddos, you may want to leave it out. Plus, 31 grams of protein per serving.

Chicken Southwest Wraps

These Southwest Wraps require no cooking and take just 15 minutes to make. They're loaded with flavor from the chicken, black beans, corn and southwest ranch dressing. Plus, 29 grams of protein per wrap. These store great in the fridge for lunch the next day too. I wrap mine in foil for an easy grab and go lunch.

Chicken Minestrone Soup

This Soup is perfect for Spring with tons of veggies and it's simple to make too. This one is high in protein, with 18 grams per bowl, because we're adding in chicken and 2 different types of beans. It's filling enough for a full meal, or you can pair it with a grilled cheese.
