Why is Summer flying by? Here we are already at Father's Day weekend. Eek!

I've been enjoying Summer too much..I slept until 7:30 twice this week, but I think it was just recovering from a lot of sunshine last weekend at the beach. I kept worrying about the kids getting burnt and I was the one who got it the worst.

This weekend we're celebrating all the dads out there. I spoiled my husband a bit and got him some new Victory Nike Golf Shoes with a matching hat. I hope he likes them because he's soooo damn picky.

My dad (not picky at all) is obsessed with espresso right now, and I recently gave him an espresso maker, so I bought him a milk warmer and frother and paired it with one of his favorite chocolate treats, the goo goo cluster.

Now, to the good stuff..here's what I'm cooking this weekend. Oh, I should also mention that my dad is a pescatarian (no meat, just fish).

To the Recipes...

For the Meat Lovers:

My husband is a meat and potatoes guy all the way! These are some of his favorites:

Blackstone Philly Cheesesteaks: The griddle is always an easy option and these cheesesteaks NEVER disappoint.

Dutch Oven Pork Chops in a creamy mushroom gravy with Boursin Cheese Mashed Potatoes. This one is great if you're cooking indoors.

Boneless BBQ Smoked Chicken Thighs paired with Smashed Potato Salad and Cowboy Baked Beans (with ground beef).

Fish Recipes:

My dad's favorites!

Blackened Mahi Mahi over Coconut Rice. This is a summer must try, especially with the Mango Pico De Gallo.

These Baja Shrimp Tacos are packed full of flavor and feature a Jalapeno Slaw. I can easily down 5 of these.
