This week I ACTUALLY meal prepped a few items for the week and I'm loving the benefits now, even though I didn't love the upfront work.

It only took around an hour on Sunday, and it really is a life saver when you're kicking off a busy week.

Let's get to it!

Meal Prep

To kick things off for breakfast, I eat of ton of yogurt parfaits in the Summer because I love the high protein & fresh fruit. I basically just layer plain greek yogurt, with fruit (strawberries, blackberries, peaches, blueberries, etc.) & then I store the granola separately in my new favorite meal prep containers.

These are sooo cool!

Next up I made some chicken breast (or you can grab a rotisserie chicken) for this Dill Pickle Chicken Salad, which is amazing on croissants, sourdough, with crackers, or on a bed of lettuce.

Leftover Pineapple turned into Pineapple Pico de Gallo for snacking with tortilla chips or topping grilled fish, chicken, etc.

Finally, I cooked ground turkey to make Turkey Taco Bowls. Cooking tip: Try adding in some enchilada sauce & taco seasoning to your ground turkey. It keeps it from drying out and adds so much more flavor!
