This week has been beyond chaotic and probably the most expensive week of my existence on this planet.

A few days after we got home from Spring break (in Disney πŸ’ΈπŸ’ΈπŸ’Έ), our 3 year old dog Hutch started throwing up and it seemed serious because he wouldn't eat any food. I dangled bacon in his face and he refused. He's a chocolate lab and can pretty much eat anything....

Except for the giant bone that was lodged in his small intestine. We still don't know how he even got it. Dr. said it looked like a rawhide and we only give him bully sticks. The photo of the object proved it was not a bully stick πŸ˜΅β€πŸ’«πŸ˜΅β€πŸ’«

He's laying next to me recovering after his emergency surgery (πŸ’ΈπŸ’ΈπŸ’Έ) on Tuesday. Turns out I love that damn dog, haha ❀️

With businesses to run, school, after school activities, and making sure the dog is being cared for properly, it's been a lot!

The two recipes I'm sharing today is for nights when you have no energy to make dinner, but it isn't going to make itself. Basically my life this week.

Sheet Pan Lemon Chicken Gnocchi

This recipe is so yummy and super easy to prep in minutes! Chicken, gnocchi and broccolini roast to perfection in the oven and are tossed in garlic butter and parmesan for a low effort dinner.

Italian Sausages on a Sheet Pan

Another favorite are these Sheet Pan Italian Sausages with peppers and onions. Throw them onto hot dog buns for a simple dinner or whip up rice in the rice cooker and serve it on the side. It doesn't get easier than this!

For an easy sheet pan breakfast, try these Sheet Pan Pancakes. Always a kid favorite.
