One Pot Lemon Chicken and Potatoes

This is a greek inspired recipe that uses a full lemon to add tons of flavor, while also tenderizing the chicken thighs. This one is great on a budget too and it's one pot recipe!

Asparagus & Pea Pasta

A creamy pasta loaded with roasted asparagus and sweet peas in a light and creamy Pesto sauce. You can easily protein boost this one by adding grilled chicken, salmon or shrimp.

Cilantro Lime Salmon

This Oven Baked Salmon is full of protein and nutrients and cooks in under 15 minutes, with really simple prep work. Pair it with rice and my Mango Pico De Gallo for a flavor packed weeknight dinner. *The pico stays good for a few days in the fridge, so you can always prep that ahead to save time.
