I think all of us love a 30 minute one pot dinner.. Less mess and ready quick! Plus, it's really easy to build flavor if you do it right.

I'm a burnt out mom on the second week of school and these recipes have been my go to ideas lately.

I say 30ish minutes, because I'm not going to lie, I'm a really quick chopper and I don't mess around in the kitchen. If you're like my husband, it may take about 40 minutes. He's an amazing cook, but sooooo slow.

One Pot Dinner Ideas

Chicken Broccoli Pasta Bake: (top left) Brand NEW to the blog this week with a lightened up alfredo cream sauce and a crispy garlic butter Panko topping.

Stuffed Pepper Skillet: (top right) You get all the flavors of stuffed peppers, but in a much quicker one skillet form. This one is soooo good and even the kids ate it. My youngest picked around the peppers and onions, but still a win.

Ground Beef Gnocchi: (bottom left) Creamy sauce with perfectly cooked gnocchi makes this recipe impossible to stop eating.

Chicken Couscous: (bottom right) If you're looking for a lighter, healthier recipe you'll love this sautéed chicken with couscous. It's simple, easy to make and is packed with Mediterranean flavors.

That's it for this week..Hooray for FRIDAY! My daughter is going to her first football game as a freshman. She said I couldn't drop her off because she knows I'll park and stay and watch the game (hahaha, she's right).
