I'm having a hard time facing reality because my kids went back to school this week and I wasn't ready to say goodbye to Summer.

Our schedules are already packed with school, work and sports and now I've got to get my sh*t together.

Today I'm sharing some recipes I'm packing for school lunches and a few easy weeknight dinners that I love when things get real crazy.

To the Recipes...

Lunch Box Ideas (for Kid's & Adults):

โ€‹DIY Pizza Lunchables: These are a kid favorite and on repeat in our house all school year.

โ€‹Turkey & Cheese Roll Ups: Take about 10 minutes to make and everyone loves these. They make a great appetizer too.

โ€‹Protein Pasta Salad: Features meat, cheese and chickpeas so it's actually filling.

โ€‹Southwest Chicken Wraps: Me and my oldest are obsessed with these and they are easy to prep ahead on Sunday, then just pull from the fridge during the week.

Weeknight Dinners (Ready in 30 minutes with minimal mess):

โ€‹Coconut Panko Crusted Cod: A Summer favorite & ready in 25 minutes.

โ€‹Meatballs & Creamy Orzo: A comfort food favorite using frozen meatballs for a quick and easy dinner.

โ€‹Kielbasa Pierogi Skillet Dinner: On repeat in our house for low effort and big taste!
