I don't know how this happened, but my kids are going back to school Monday!! ๐Ÿ˜ฉ๐Ÿ˜ฉ My oldest goes off to high school, which is crazy.

The slow days are leaving us behind and pretty soon the chaos of busy weeknights filled with sports will begin.

I'm not falling into the grabbing fast food after sports trap, so today I'm sharing easy to prep dinner recipes that are made for busy weeknights.

Slow Cooker Beef Sandwiches in the Crockpot

I'm not one to share a lot of crockpot recipes, because I typically can make something quick in the dutch oven that has a lot more flavor, but this recipe is soooo good!

These Shredded Beef Sandwiches with au jus only take 15 minutes to prep in the morning, then throw it all in the crockpot. I like it best cooked on high for 5 hours, but you can also cook it on low for 8-10 hours. You'll notice I sear the beef and onions before putting them into the slow cooker, which is a game changer and provides way better flavors and textures!

This Recipe also makes a ton of meat. You could do the sandwiches on the first night and feed the whole fam, then have leftover beef the following day for quesadillas or serve the shredded beef over these Garlic Cheese Mashed Potatoes.

One Pot Dinners

You know I love a one pot dinner in my Dutch Oven. They're fast, easy, and have minimal clean up. Plus, these all pack meat, carbs, and veggies into one pot. Here are some of my favorites:

That's it for this week. I'm about to spend hours helping my kids organize their bedrooms and bathroom. UGHHHH..
