Quick, Easy and Healthier than Store-bought Options

It's Summertime, which means I've been watching my kids grab unhealthy snacks from the fridge, freezer and pantry on repeat. Anyone else experiencing this?!

They are 10 and 14 and the only option is not buying them, which I'm also doing currently. They're not happy about it ๐Ÿ˜œ

My youngest doesn't eat her full meals and then snacks all the time, so I wanted to make some homemade kid friendly food that she would actually eat (she's pretty picky).

Homemade Chicken Nuggets

These are made with ground chicken and baked in the oven with Panko Breadcrumbs that makes them nice and crispy. Serve them with your kids favorite sauces and watch them get devoured.

This recipe is also budget friendly and it makes 28-30 nuggets, so you can always freeze some or you can serve them for lunch a few days in a row.

Crispy Beef Tacos

These are my kid's absolute favorite meal. The shells are fried in oil to make them crispy, but at least they have less preservatives than frozen tacos. If you're against seed oils, you could brush the outsides of the tortillas with avocado oil and bake.

We make these for dinner all the time and my youngest just eats beef and cheese (sometimes sour cream), but I serve me and the hubby's with cilantro, onion and this homemade Avocado Crema. It's sooo good!
