I love keeping Summer holidays really simple and that means keeping the menu quick and easy and prepping whatever I can ahead of time.

Of course, we're grilling or smoking the main course outside too!

To the Menu...

Let's kick it off with my favorite Summer drinks and appetizers..

I'm grabbing a few bags of tortilla chips and I highly recommend serving them with my Elote Corn Dip, Mango Habanero Salsa or Cowboy Caviar! (All of these can be prepped ahead, but for the corn dip and cowboy caviar, add the avocado right before serving).

For refreshments, this Mint Iced Tea or Basil Lemonade is fabulous. For cocktails, try these Tajin Margaritas or Mango Mojitos.

Main Course Ideas

πŸŽ† Pulled Pork: If I'm having a big party, this is always on the menu and I'm using the *Traeger Pellet Grill. You could always smoke it a day ahead if people are coming over early.

πŸŽ† BBQ Pulled Chicken: This is a great idea if you don't have access to a grill. It cooks in the dutch oven on the stovetop and shreds apart for bbq sandwiches.

πŸŽ† Smash Burgers: My absolute favorite grilling recipe and so easy to make on the *Blackstone Griddle.

It's Dessert Time:

This Peach Crumble Cake is a brand NEW recipe and I highly recommend with vanilla ice cream. It uses store-bought cake mix topped with fresh peaches and a homemade crumble topping! So good..

This Strawberry Cream Cheese Pie is great to prep a day ahead or try this Raspberry Lemon Loaf.
